Abstract: Bamboo charcoal is the carbonaceous residue which is left after heating bamboo in the absence of oxygen called carbonization process. Generally, known as green solid fuels, it can be also used as adsorbents for purifying fluids thanks to its extra-ordinarily large surface area. In this research, three types of bamboo charcoal were applied for filtering Thai whisky in order to enhance their qualities to improve for a new market opportunity by applying inexpensive and simple processes. The properties of three types of bamboo charcoal were intensively tested, performing the whisky filtration process to optimize process condition – according to Thai Industrial Standard for whisky. Distilled whisky in this study came from Phrae province, the famous local whisky producer in Northern Thailand. From this study, the approximate analysis showed the fixed carbon content of three bamboo charcoals were statistically significant different (p=0.037), however their specific surface area did not show any significant difference. The filtration process resulted that charcoal I and II reduced most ester, fusel oil and acid content in the whisky. Charcoal I reduced the highest alcohol% and gave the highest pH value. The flow rate of 30ml/min reduced higher fusel oil content than 10ml/min. For taste tests by volunteers with blind test, the filtered whisky had better flavor and smell, with no cloudiness. From the study, it was found that the bamboo charcoal has an intriguingly effect on the property and taste of Thai whisky; therefore, it could be expected to share the market from popular imported whisky.
