Abstract:
The objective of the study of the exploratory factor analysis through
the storytelling of food from Phetchaburi province: a city of 3 flavors, is a quantitative
research of such study. It is aimed at analyzing the narrative components of food from
Phetchaburi city: a city of 3 flavors, and at presenting it in a storytelling format.
The research involved a sample group of 320 Thai tourists who had been engaged
in food tourism activities in Phetchaburi province. The data was collected through
a set of questionnaire and was analyzed by finding the values of frequency, mean,
percentage, and exploratory factor analysis. In addition, the objective of the
exploratory factor analysis is also to conduct a qualitative research involving 10 key
selected informants based on experience and significance to present the format of the
storytelling of food from Phetchaburi province which is a city 3 flavors. Deep interview
questionnaires were utilized and the content analysis identifying the themes were
conducted. The findings revealed that recent travellers to Petchaburi city within
the past year, primarily visited places where they had experienced the tasting of local
food, and had spent less than 5,000 baht per trip on food products and/or souvenirs.
They also had memorable experiences related to the taste of Petchaburi local cuisine.
The analysis of narrative components of the qualitative research of the storytelling
of food from Petchaburi: a city of 3 flavors, identified five elements which are
as follows: Element 1: storytelling of the 9 variables of the origin of food. Element
2: storytelling of the 9 variables of the ingredients of the food. Element 3: storytelling
of the 8 variables of the culinary heritage. Element 4: storytelling of the 3 variables
of the local cooking methods and Element 5: storytelling of the 3 variables of the food
safety Apart from this, there are 5 themes of the narrative elements of the storytelling
of the food from Phetchaburi province: a city of 3 flavors, which are: Narrative
1: Narratives of the origins of food consisting of 4 themes: Theme 1: the origin
of sea salt. Theme 2: the origin of palm sugar. Theme 3: the origin of kaffir lime and
Theme 4: the origin of food ecosystem Narrative 2: Narratives of food ingredients
consisting of 2 themes: Theme 1: the story of the use of ingredients of kaffir lime, salt
and palm sugar. Theme 2: the story of the taste of the local food. Narrative 3: Narratives
about the food heritage consisting of 1 theme: Theme 1: the story of the use of local
ingredients. Narrative 4: Narratives about the methods of local cooking comprising
of 1 theme: Theme 1: the story of the local food wisdom. Narrative 5: Narratives about
food safety consisting of 1 theme: Theme 1: the story of food wisdom and food safety.
