Abstract:
This study aimed to 1) study personal factors of Mala grilled food business for small entrepreneurs, 2) study Mala grilled food business operations of small entrepreneurs, 3) find out a relationship of Mala grilled food business for small entrepreneurs in the night market, Krung Thep Maha Nakhon classified by personal factors, and 4) present guidelines for developing Mala grilled food business for small entrepreneurs in the night market, Krung Thep Maha Nakhon. Research tools used in the study was questionnaire. The population in this research was 16 people in small business entrepreneurs of Mala grilled food business in the night market selected by a purposive sampling method. Statistics used in data analysis included frequency, percentage, mean, standard deviation, and Chi-square analysis.
The results found that most of the entrepreneurs were single female, aged 31 40 years, educational level below bachelors degree and bachelors degree, with an average monthly income between 30,000 45,000 baht. The main popular raw materials were meat and entrails. In terms of hygiene and food safety, there was cleanliness within the stores regularly. Additionally, rubbish bins in the stores had lids closed completely. Also, there was maintaining raw materials standards to remain fresh. The most sales period was between 18:00 20:00. The store rentals type was monthly rental contract. In terms of the stores location, the important thing involved the unique stores name and the stores symbols were easy to remember. The important things in sales strategies included organizing the same raw material in the same area and obviously categorized in order to be convenient for purchasing. The average cost a day was 3,001 4,500 baht. The results of finding the relationship between the entrepreneurs personal factors found that they had the relation with Mala grilled food business for small entrepreneurs in the night market, Krung Thep Maha Nakhon. That was to say, gender was related to the store s location. The marital status was related to the store rentals type with statistically significant at the 0.05 level. Guidelines for developing Mala grilled food business operations for small entrepreneurs were as follows: 1) there should be selecting raw materials that are clean, fresh, and new, 2) there should be taking care of cleanliness of places and food equipment, 3) creating a clearly visible stores name plate, and 4) there should be an increase of distribution channels through online media and making regular account for money circulation.
