Abstract:
The objectives of this research were to 1) study the basic recipe of the soft
chocolate fudge cake products, 2) study the right amount of cricket powder for the
products of the soft chocolate fudge cakes, 3) study the nutritional value of the
high-protein soft chocolate fudge cake with cricket powder, and 4) study the consumer
acceptance of the high- protein soft chocolate fudge cake with cricket powder. The
research was conducted using a Randomized Complete Block Design (RCBD). The mean
( 𝑥̅) was analyzed by Analysis of Variance ( ANOVA) and compared with statistical
differences (least significant difference, LSD). The selection results of 3 basic recipes of
soft chocolate fudge cake products found that the panelists accepted recipe 1 in terms
of overall preference, appearance, color, flavor, taste, and texture at the most favorite
level with an average of 4.60 (full score 5).
For the results of the study on the optimum amount of cricket powder
supplementation in the products of the soft chocolate fudge cake at 3 different levels
of 5, 10, and 15 percent of the total weight of the ingredients, it was found that the
panelists accepted the 10 percent of cricket powder supplementation in terms of
overall preference, appearance, color, flavor, taste, and texture at the most favorite
level. Cricket powder supplementation affects the color of soft chocolate fudge cake.
The nutritional value of the soft chocolate fudge cake product with cricket powder
was that 100 grams of cake contained 275.65 kilocalories of energy, 7.69 grams of fat,
10. 91 grams of protein, 55. 7 milligrams of cholesterol, 40. 70 grams of carbohydrates,
0.89 micrograms of vitamin B12, and 1.98 grams of ash, which are more protein content
than the basic recipe. The study of consumer acceptance of high- protein soft
chocolate fudge cake found that 90. 83 percent of general consumers accepted this product because it is novel, interesting, flavorful, delicious, and nutritious.
The consumers were interested in selectively purchasing the high-protein soft chocolate
fudge cake with cricket powder at 30 baht per piece.
