Abstract:
A study of 1-methylenecyclopropene (1-MCP) vapor on loss of chlorophyll in celery wereinvestigated. The research project was divided into 2 trials. In the first experiment the celery weretreated with the 0(control), 0.01, 0.1, 0.5 and 1.0 ppm 1-MCP vaporise for 6 and 12 hours at20ฐC before storage at 10ฐC with relative humidity of 95%. Exposure of the 1.0 ppm 1-MCP for6 hours showed best condition to maintain celery quality involved in decrease of chlorophyllaseand peroxidase activity causing vetardant of color change of celery leaf. In anather experiment,effect of the 1-MCP and exogenous ethylene applications on quality of celery were studied. Theexperiment was divided into 2 groups. In the first group, the celery were treated with 0.5 ppmethylene for 1 hour at 20ฐC in 0, 1st, 2nd and 3rd day after storage. In second group, celery wereexposed with 1-MCP vapor at concentration of 1.0 ppm for 6 hours and then applied with ethyleneat concentration of 0.5 ppm for 1 hour in day 1, 2 and 3 after storage. The results showed that 1-MCP could delay some metabolism such as respiration, ethylene production, chlorophyllase andperoxidase activity. As a result, 1-MCP played an important role on maintaining chlorophyllcontent and color change of celery with significant difference of (p=0.01).
