Abstract:
A study of the Antioxidative potency of Thai Spicy Salads and Thai Spicy Salads with
salted crab and Thai Anchovy in Bangkok area by means of ORAC method found that, Thai
Spicy Salads and Thai Spicy Salads with salted crab and Thai Anchovy have the different antioxidation
properties. As a result of studying, Thai Spicy Salads contains 2,176.82 ORAC Scores
per 100 grams and Thai Spicy Salads with salted crab and Thai Anchovy contains 1,923.44
ORAC Scores per 100 grams. The analysis solution can be concluded that Thai Spicy Salads has
more ORAC Score than Thai Spicy Salads with salted crab and Thai Anchovy was 253.38 ORAC
Scores per 100 grams or 11.64% In conclusion, the difference of ORAC Score of Thai Spicy
Salads and Thai Spicy Salads with salted crab and Thai Anchovy is caused by the individual
formulations and the amount of each ingredients, that somewhat, will affect to the anti-oxidation
properties.
